Delicious & Spicy Treat without guilt! For all those watching their weight, this is a must try. With a spicy and tangy flavour, Kimchi will bring alive sensations in your taste buds with the benefit of a whole lot of nutrients your body needs.
4 medium size cucumber
Wash cucumber and slice it in such way so it's bottom part is not apart in pieces. Cover the cucumber nicely with salt for half an hour and then clean the salt and wash cucumber nicely and keep aside
For filling :
1/2 thinly sliced carrot
1/2 thinly sliced onions
A bunch of chives (must)....cut long and thin
4 cloves of garlic cut in small pieces
2 tbsp sesame seeds
1 cup red chilli flakes
2 tbsp soy sauce
2 tbsp sesame oil
1 tsp vinegar preferred ACV
1 tsp brown sugar (I prefer crushed Jaggery)
Mix all the ingredients
Now fill the cucumber well with this filling and keep in refrigerator atleast one hour before serving topped with white sesame seeds.
You can enjoy this with brown rice or your favorite grain....I like it with plain quinoa or khus khus.
