One of the most satisfying and our chefs favorite dish. It is a salad and a mini meal.
A recipe for all those who find it hard to spare time for their health.
I cup tri color quinoa (if not available you can take basic quinoa)
Boil quinoa in two cups of water till the water is dissolved and quinoa is cooked. Cool and refrigerate it for at-least two hours.
*1/2 onion chopped finely
*8 cherry tomatoes
*1/4 red capsicum
*1/4 yellow capsicum
*A bunch of parsley
*1/2 cup black olives
Cut all the above ingredients very finely and add to cooked quinoa and mix nicely
*1/4 pumpkin oil (if not available you can use extra virgin olive oil) *1 lemon
*Salt as per taste (rock or Himalaya salt)
*1/2 tsp black pepper
*1/2 tsp red chili flakes (Optional)
Whisk the above ingredients and keep apart of at least half an hour then pour to the quinoa Salad and top with a handful of pumpkin seeds..
Enjoy the salad loaded with all necessary vitamins,fat,and protein....
